Peach + Coconut Yoghurt Popsicles
I am ice-cream obsessed. It doesn’t matter what the weather I will always have an ice cream. I’ve cut my ice-cream addiction down to only having it on special occasions, like the start of summer when real fruit ice-creams start being made at the fruit shops or whenever I go to Hamilton and go to Duck Island Ice Cream.
These popsicles are amazing any time of year and you are able to use any type of fruit that you have lying around in your fridge that is getting on the ‘soft and about to throw out’ side. They make the perfect treat on a hot summer’s day but also a brilliant comfort food at any time of year. They are dairy free, filled with natural sugars and super delicious.
Dairy Free Peach Popsicles
¾ cup of coconut yoghurt. (I love using the plain Raglan Coconut Yoghurt)
1 tsp vanilla paste
400g of chopped peaches.
- In a bowl mix the coconut yoghurt with vanilla paste
- In a separate bowl, mix the peaches and half of the coconut yoghurt mixture with a hand-held blender or food processor and blend until smooth
- Grab your popsicle moulds and layer the peach mixture with the other half of the coconut yoghurt mixture.
- Insert popsicle sticks and place in the freezer for around 4-5 hours or until firm.
Note: You can either choose to remove your peach skins when chopping, putting the mixture through a sieve or just leaving them and having a surprise in your popsicle.
Try not to eat them all in one day.
